In the mouth, food is mechanically broken down through the process of mastication.
Mastication reduces food into small particles thus increasing the surface area for enzymatic action. During the process, food is moistened and mixed with saliva secreted from salivary glands.
Saliva is a mixture of water,salivary amylase or ptyalin and mucus.
The mixture is slightly alkaline to provide optimum medium for action of salivary amylase.
Water acts as a solvent and mucus lubricates the food and lining of the mouth.
The enzyme digests starch into maltose. The tongue rolls found into small round masses called boluses.
The tongue pushes the bolus into the pharynx.
