The red berries are picked by hand. The harvested berries are carried in baskets or sacks to the factory. The berries are sorted out to remove the diseased berries. The different grades are weighed. Berries go through a machine that removes the outer covering. The beans are fermented in tanks for some time. The beans are washed and then sun dried for about a week. The husks are removed and the beans winnowed. The beans are sorted out and graded according to size and quality. The beans are roasted at temperatures of about 100oC. The beans are ground into powder ready for sale.
