Taste is mainly a function of taste buds in the mouth.
Taste allows humans and other mammals to select food in accord with desires and also other body tissue metabolic needs. Sour taste is caused by acids i.e. hydrogen ion concentration. Salty taste is elicited by ionized salts, mainly sodium ion concentration.
Sweet taste isn’t caused by any single class of chemicals. Some chemicals that cause this taste include sugars, alcohols, some amino acids and some proteins. Bitter taste is also not caused by any single type of chemical agent.
Bitter taste causes the person or animal to reject food. Many deadly toxins found in poisonous plants cause intensely bitter taste, leading to rejection of food.
