-Steam must be produced throughout the cooking and therefore, the water must boil constantly to avoid reduction of heat.
-Container for food must be well covered to prevent the food from soaking up in condensing steam as this will make it soggy.
-Always keep a pan of hot water aside to add to the pot if it dries up to make sure that steam is produced constantly.
