1.Dent maize (Zea mays indenata) also known as yellow dent corn, white corn or field corn .Has small indentations (dents) at the crown of each kernel. Has high proportion of starch and low proportion of protein. The grain texture is soft and light.
2.Flint maize (Zea mays indurata) also called Indian corn. Each kernel has a hard outer layer to protect the inner soft endosperm. It comes in many colors.
3.Sweet maize (Zea mays saccharata) has more sugar and less starch and used as vegetable.
4.Softor flour (Zea mays amylacea). One of the oldest types of corn. It has a soft endosperm.
5.Popcorn (Zea mays everta) also called popping corn in which the kernel expands and puffs up when heated.
6.Waxy maize (Zea mays ceratira) has waxy starch due to high contents of highly branched starch called amylopectin.
7.Pod maize (Zea mays tunicate) This is a mutant maize that has leaf gene active in the maize cob causing leaves to grow in the male and female inflorescence.
