1.Cassava has low nutrient density which results into nutritional disorders in the absence of balanced diet. Cassava has only 0.9% protein and cassava diets should be supplemented with other foods rich in proteins, minerals and vitamins.
2. Presence of cyanogenic glycosides. These are compounds found on the skin, flesh and finer inner core of tubes and sometimes in leaves. These compounds are highly toxic and cause death if consumed in large quantities. If consumed in small quantities over a long time inhibits iodine metabolism leading to goiter. The concentration of the compounds range between 10-490mg/kg root in fresh roots. During processing (drying) there is enzymatic reaction which converts hydrocyanic acid (HCN) in the compound which kills to less toxic compounds.
