Glucose
This is a simple sugar also known as dextrose or blood sugar. It is found in fruits,
vegetables and honey. Glucose has a mild taste. It is the main source of energy for the
central nervous system which includes the brain and the spinal cord. The red blood
cells (RBC) also prefer glucose as a source of energy. Glucose is the form in which
carbohydrates is transported in the body. The chemical formula is C6H12O6. Each
carbon atom has 4 bonds; each oxygen has two bounds and each hydrogen, one bond,
Fructose
This is a monosaccharide; also known as fruit sugar or levulose. It occurs naturally in
fruits, honey and saps. Fructose is intensely sweet, the sweetest of the sugars. It has
the same chemical formula as glucose (C6H12O6) but its structure differs, Figure 2.2.
The arrangement of the atoms in fructose stimulates the taste buds on the tongue to
produce the sweet sensation.
Galactose
Galactose is a monosaccharide that is not found free in nature but is produced from
lactose (milk sugar) by hydrolysis in the digestive process. Galactose hardly tastes
and has the same numbers and kinds of atoms as glucose and fructose, but in yet
