If one double bond exists between two carbon atoms, the fatty acid is
monounsaturated (MUFA). If there is more than one double bond between carbon
atoms, the fatty acid is polyunsaturated (PUFA). Table 3.2 gives a list of unsaturated
fatty acids, the number of carbon atoms in their chain, number of double bonds and
common sources.
