As a group fat soluble vitamins :
- Are absorbed with fat in the chylomicrons that enter the lymphatic system before
circulating in the blood stream. Whenever fat absorption is impaired, secondary
deficiencies of the fat soluble vitamins can develop.
- Attach to protein carriers(lipoprotein) to be transported through the blood because
fat is not soluble in watery blood.
- Are stored, not excreted, when consumed in excess of need. The liver and adipose
tissues are the primary storage sites. Because these vitamins are stored,
deficiencies symptoms can take months or years to develop when intakes is less
than adequate.
- Can be toxic when consumed in large doses over a prolonged period. This applies
primarily to vitamins A and D. Large doses of vitamin E and K are considered
relatively nontoxic. Vitamin toxicities are not likely to be caused by food but by
inappropriate use of supplements.
- Do not have to be eaten every day because the body can retrieve them from
storage as needed.
- Are found in fat and oil portion of foods.
