i. Duck eggs
Duck eggs look like chicken eggs, but are larger: As with chicken eggs, they are sold in sizes ranging from small to jumbo. Duck eggs have more protein and more flavor/richness than chicken eggs, but they also have a higher fat content and more cholesterol. When boiled, the white turns bluish and the yolk turns red-orange.

Goose eggs are four to five times larger than chicken eggs. One will take up the palm of your hand. They also have a somewhat richer flavor. The eggs can be used in any recipe calling for chicken eggs, substituting one goose egg for two chicken eggs.
iii. Guinea fowl egg
The guinea fowl egg has an ivory shell flecked with brown; it has a more delicate flavor than that of a chicken egg.
iv. Ostrich eggs
The ostrich egg, along with the emu egg, is the largest egg: twenty times as large as a chicken egg. The ivory-colored shell is very thick, requiring a sharp knife to crack.
v. Turkey eggs
Turkeys lay large eggs with a brown shell and a delicate flavor.
vi. Quail eggs
Quail eggs have a similar flavor to chicken eggs, but their petite size (five quail eggs equal to one large chicken egg). The shells range in color from dark brown to blue or white.
