i. Oxido-reductases e.g. peroxidase, catalase, phenalase, ascorbic acid oxidase, tyrosinase, ascorbinase, polyphenoloxidase).
ii. Hydrolases; an enzyme that catalyzes the transfer of electrons from one molecule, the reductant, also called the electron donor, to another the oxidant, also called the electron acceptor. This group of enzymes usually utilizes NADP or NAD+ as cofactors. (Lipase, invertase, tannase, chlorophylase, amylase, cellulase)
iii. Pectolytic enzyme; are enzymes that hydrolyze pectin between individual plant cells. this causes the cells to separate, e.g. pectolases, polygalacturonases
iv. Lipoxidase; an enzyme of the oxydoreductase class that oxidizes unsaturated fatty acids to peroxides.
v. Lipolitic enzymes; the hydrolysis of fats into fatty acids and glycerol, as by lipase.
