Volume forecasting is a method of predicting the volume of sales of an establishment for a specified period of time. It analyses the sales information and helps to minimize common problem of shortages or overproduction of items.

Objectives of volume forecasting
- To predetermine the total number of meals to be produced.
- To predict the choice of menu items by customers.
- To facilitate purchasing
- To ensure availability of all necessary ingredients
- To ensure that appropriate stock levels are held.
- To control food cost in relation to sales within the cost limit
- To enable the comparison of actual volume of business and the budgeted. It can be in
form of sales, number of covers and number of meals.
