Cooking fish can be a daunting task. The main point of effectively cooking fish is by ensuring it doesn't overcook, because once this happens, the fish may either fall apart, or it may becomes dry and flaky. Try this unique finger-licking dish of coconut fish balls this Christmas.Coconut fish ballsPreparation time is 50 minutesServes 4 peopleIngredients1/2-kg skinless white sea fish fillets cut into small pieces.1/2-tsp salt.1 tbsp corn flour.2 onions, chopped.1 tbsp dhania or coriander, chopped.1/2-cup coconut, grated.1 pinch black pepper.Oil to fry.Method of cooking1 Mix the fish, salt, corn flour,onion, coconut, coriander and egg in a blender. Blend for a minute.2 Place the mixture into a bowl and season with the black pepper. With damp hands, shape the mixture into small balls. Transfer to a tray and in the fridge for 30 minutes.3 Heat some oil in a large pan and drop the fish balls into it to deep fry for about 3-4 minutes, until the balls begin to float. Drain excess oil on paper towels on a tray.4 Serve with sauce and rice while hot.Cooking tips for fish1 Ensure you cook fish in very hot oil so that it doesn't absorb too much oil.2 You can use draining paper to help absorb excessive oil.3 Fish is a tasty delicious accompaniment to most African dishes, including potatoes and rice.
