1. The scales should be moist,lie flat and be plentiful.2. Skin should be covered with fresh sea slime or be smooth and moist with a good sheen and no abrasions.3. Eyes should be bright,full and not sunken,no slime or cloudiness.4. Gills should be bright red in colour with no bacteria slime5. Flesh should be translucent and resilient so that when pressed impression goes quickly.It must not be limp.6. Smells of fish should be pleasant with no ammonia smell or sourness.No bruising or blood clots7. No areas of discoloration. Fish.Fish should be purchased daily that is directly from market/supplier.8. Well iced so that it arrives in good condition.9. Medium sized fish are usually tender,better than large fish which may be coarse.
