GRILLED STEAK WITH MUSHROOM AND PORT RAGOUTINGREDIENTS FOR MUSHROOM RAGOUT• 60g butter• 15ml olive oil• 60g oyster mushrooms• 60g portobello mushrooms• 60g button mushrooms• 2cloves of garlic, finely chopped• 15ml white port• 15ml white wine• 90ml cream• 6ml lemon juice• 6g thyme• Salt and pepper to taste• 3 shallots or spring onionsMETHOD:1. In a hot saucepan, melt half the butter and oil.2. Saute the mushrooms with the shallots and garlic.3. Add the wine and port and allow the mixture to bubble until it is reduced by about one third.4. Add the cream, lemon juice and thyme.5. Season to taste.serve hot with grilled steak.INGREDIENTS FOR THE STEAK• 90 to 150g steak fillet per person• Salt and pepper to taste.METHOD:1.
