COURSE DESCRIPTION
The Nutrition counselling course is designed to equip the learner with knowledge and nutrition counselling techniques (assessment, diagnosis and counselling) at individual and group levels; inter personal skills, knowledge on psychological handling of patients and counselling at cross-cultural and multi-cultural settings, dietary habits that require change at individual, household, community and institutional levels. Also covered in this course are the theories for understanding human dietary behavior national and international nutrition counselling guidelines. The course also includes practical experience with case studies, role plays, critical reviews and presentations.
OBJECTIVES
At the end of this course the learner should be able to demonstrate the ability to counsel clients/patients using effective counseling skills for individuals and group. The learner should be able to appreciate the importance of data in evaluating the effectiveness and adjusting accordingly the nutrition plan prescribed. The learner should be able to describe different techniques used in nutrition counseling and elements of quality nutrition counselling.
Definition of terms
Behavior – this is the way in which a person conducts themselves in response to a particular stimulation or situation i.e. this is a person’s response which is observed directly or indirectly. Direct observation is possible when studying people’s responses to a work environment whereas indirect observations are decision making processes and attitudes, in terms of results or how people describe them verbally.
Counselling - It is a series of direct contacts with an individual which aims to offer him assistance in changing his attitudes and behavior towards a certain element in his/her life. It is an individual process.
Education – this is a formal process to instruct or train an individual(s) with the aim of assisting them to manage or modify behaviors.
