KAIMATI RECIPEIngredients? ½ kg home baking flour? 1 egg? ¼ teaspoon dried yeast? Oil for deep frying? ¼ teaspoon of cardamon or more to tasteFor coating:? 3 tablespoons sugar? 5 tablespoons waterMethod(i) Mix the yeast, flour and cardamon in a large bowl.(ii) Beat the egg and make a well at the centre of the flour mixture. Pour in the egg and start mixing with your hand. As the batter forms, add in a little water and continue kneading with your hand.(iii) The batter is ready when it’s thick and sticky. Knead well with your hands until the lumps are gone and the batter is smooth. Cover and leave aside in a warm place for 45 minutes to allow the mixture to rise.(iv) Heat oil and drop the batter in using fingertips, a ball at atime.(v) Cook until light brown and then remove and drain.(vi) For the coating, put the sugar and water in a sufuria and boil on medium heat until a syrup forms and there are lots of bubbles.(vii) Place the balls and drizzle the syrup over them and leave for five minutes. Serve and enjoy.
